Description
Blackened chicken takes the place of traditional fajita meat in this easy weeknight dinner!
Ingredients
- 1 pound Thin Sliced Chicken Breasts
- Olive Oil
- Blackening Seasoning (like Zatarain’s)
- 1 Green Bell Pepper, Sliced
- 1 Red Bell Pepper, Sliced
- 1 Medium Onion, Sliced In Half Rings
- 8 Flour Tortillas, Warmed
- Toppings Of Your Choice, Such As Shredded Cheese, Sour Cream, And Guacamole
Preparation
Brush each chicken breast with olive oil. Sprinkle with blackened seasoning.
Heat a cast iron skillet over high heat. Cook each chicken breast 1 1/2 to 2 minutes, until charred and cooked through. Remove chicken and keep warm. Reduce heat to medium high.
Add about 1 tablespoon of olive oil to the pan. Add sliced peppers and onions and cook, stirring occasionally, until crisp tender, about 4–5 minutes.
Slice the chicken and serve with peppers and onions in tortillas with toppings of your choice. Enjoy!
