Description

Lobster “Roll” Cups: a Maine classic turned into an elegant appetizer.

Ingredients

  • 2 cups Cooked Lobster Meat, Chopped
  • 2 Tablespoons Mayonnaise
  • 2 Tablespoons Finely Diced Celery
  • 1 Tablespoon Lemon Juice
  • 1 teaspoon Lemon Zest
  • 24 whole Phyllo Shells
  • 1 dash Cayenne Pepper

Preparation

In a medium bowl, gently stir the lobster meat, mayonnaise, celery, lemon juice, and zest to combine. (Note: The mixture can be made a few hours ahead of time and refrigerated before placing in phyllo cups.)

Place 1 heaping teaspoon of the lobster mixture into each phyllo cup. Sprinkle a small amount of cayenne pepper on the top of each cup if desired. Serve immediately.
