Description
Buttery Parmesan crisps topped with heirloom tomatoes and fresh basil.
Ingredients
- 6 Tablespoons Grated Parmesan Cheese
- 1-½ Tablespoon Unsalted Butter, At Room Temperature
- 1 Tablespoon Plus 2 Teaspoons All-purpose Flour
- 2 whole Large Heirloom Tomatoes, Seeded And Diced
- 2 Tablespoons Chopped Basil Leaves
- 2 teaspoons Extra Virgin Olive Oil
- ¼ teaspoons Kosher Salt
- ¼ teaspoons Freshly Ground Black Pepper
Preparation
1. Preheat the oven to 400°F. Line a large baking sheet with parchment paper. Stir together the cheese, butter, and flour in a small bowl using a fork. Form the dough into a 4-inch log. Cut into 12 even slices and place on the prepared baking sheet. Using your fingers, press the slices into very thin rounds. Bake for 7 to 8 minutes, until golden brown and crispy. Remove from the oven and let cool completely on the baking sheet.
2. Toss together the tomatoes, basil, and olive oil in a small bowl to combine. Season with salt and pepper, to taste. Spoon the tomatoes over the crisps and serve.
