Fantastic light supper for two any night of the week.
Ingredients
- ¼ cups Fish Stock Or Low Sodium Vegetable Stock
- 12 ounces, weight Tilapia Filets, Fresh Or Thawed From Frozen
- 1 whole Lemon, Zest And Juice
- 1 teaspoon Tarragon
Preparation
Preheat oven to 400ºF.
In a baking dish, add fish stock (or vegetable stock) and set tilapia in a single row. In a small bowl, add lemon zest, juice and tarragon, stir to mix. Pour over fish. Cover baking dish with aluminum foil and bake 6–8 minutes.
Serve with rice (white, wild, brown). Enjoy!
