All American Pancakes

Description

A light and fluffy pancakes made with strawberry and blueberry jam with a whipped cream middle.

Ingredients

  • ⅓ cups Greek Yogurt, Plain
  • 2 whole Egg Whites
  • ½ teaspoons Vanilla Extract
  • ⅓ cups Spelt Pancake Mix
  • ½ teaspoons Sugar
  • 2 Tablespoons Strawberry Jam
  • ¼ cups Whip Cream, Fat Free
  • 2 Tablespoons Blueberry Jam

Preparation

Mix Greek yogurt, egg whites, and vanilla extract into a small bowl.

In a separate bowl, combine pancake mix and sugar. Combine pancake mixture with yogurt mixture and whisk till evenly mixed.

Place 1/4 cup batter onto nonstick skillet and cook till bubbles start appearing through the top of the pancake and then flip.

To assemble, layer the pancakes. On the bottom layer, put 1 tablespoon strawberry jam. On the middle layer, spread 2 tablespoons whipped cream. And on the top layer, put 1 tablespoon blueberry jam.
