Mustard Salmon

Description

Salmon poached in a mustard sauce.

Ingredients

  • 2 Tablespoons Grape Seed Oil
  • 2 pounds Salmon Fillets
  • 3 Tablespoons Old Bay Seasoning
  • 1 Tablespoon Salt
  • 2 cups Mustard Sauce
  • 1 cup Coconut Milk
  • 1 Tablespoon Dill, Divided
  • Mashed Potatoes, To Serve

Preparation

Preheat oven to 325ºF.

Heat your cast iron skillet on medium high heat and add oil. Meanwhile, season salmon with Old Bay and salt.

Once oil is hot, add salmon and cook flesh side down for 2 minutes. Pour mustard sauce and coconut milk into the skillet and mix around.

Move skillet to oven. Cook for 10 minutes. Remove from oven and remove salmon from skillet.

Turn the stove to high. Add 2/3 of the dill. Reduce mustard sauce by about half.

Serve salmon on top of mashed potatoes and cover with as much sauce as you like. Garnish with remaining dill.
