Mini Bacon-Cheese Meatloaves

Description

Plain ol’ meatloaf kicked up a notch!

Ingredients

  • 1 pound Ground Beef
  • 1 whole Egg
  • ¼ cups Bread Crumbs
  • ¼ cups Milk
  • ¼ cups Ketchup, Plus More For Coating
  • ¼ cups Shredded Cheddar Cheese
  • ¼ cups Grated Parmesan Cheese
  • 4 slices Bacon

Preparation

Preheat oven to 375ºF. Line a baking sheet with foil. Spray foil with nonstick cooking spray.

In a mixing bowl, combine beef with remainder of ingredients (except bacon slices). Mix until combined well. (Your mixture should be firm but not too dry. Adjust texture by adding more breadcrumbs or milk, as needed.)

Form meat into 4 to 5 individual loaves. Wrap a single slice of bacon around each loaf.

Drizzle or spread tops with additional ketchup, to taste. Place on baking sheet and bake for 40–45 minutes or until meat is done and no longer pink.
