Description

Just three ingredients and super easy to pull together. The hardest part is waiting for them to freeze! Substitute frozen yogurt for a healthy twist!

Ingredients

  • 2 cups Vanilla Ice Cream, Or Your Favorite Frozen Yogurt
  • 6 ounces, weight Fresh Blueberries, Divided
  • 6 ounces, weight Fresh Raspberries, Divided

Preparation

Add the ice cream half of the berries to a food processor or blender. Pulse about 20 times until fruit is broken up and the mixture is smooth.

Scoop 1 tablespoon of the ice cream mixture into each popsicle mold. Drop a couple of blueberries in each mold. Add another tablespoon of the ice cream mixture to each mold. Now add a couple of raspberries. Then add another tablespoon of the ice cream mixture to each mold and repeat with the blueberries , and then again with the raspberries if you have room.

Freeze the pops until solid, at least 4 hours. To release the popsicles, just run the molds under very warm water for 10–15 seconds. Jiggle and pull out!

Eat quickly. Ice cream doesn’t stay frozen forever!

Note: Feel free to mix blueberries and raspberries in a layer or to start your layers with raspberries instead of blueberries. It really doesn’t matter. No matter how you arrange things, they will taste “berry” good!
