This salsa is so refreshing. It’s perfect with chicken or you can spice it up and eat it with chips.
Ingredients
- ¼ cups Fresh Lime Juice
- 2 Tablespoons Olive Oil
- 2-½ teaspoons Sugar
- ½ teaspoons Salt
- Fresh Cracked Black Pepper
- 1 cup Corn, Frozen (thawed), Canned (drained) Or Fresh
- 1 Roma Tomato, Chopped
- 1 Avocado, Peeled, Pitted And Chopped
- ¼ cups Red Onion, Finely Chopped
- ¼ cups Fresh Parsley Or Cilantro, Chopped
Preparation
In a medium size bowl, whisk together lime juice, olive oil, sugar, salt and pepper. Gently stir in remaining ingredients. Serve!
