Easy Marinated Chicken Tacos

Description

My favorite recipe for easy marinated chicken (or steak) tacos.

Ingredients

  • 1 pound Organic Chicken Breast, Cut Into Small Pieces
  • FOR THE MARINADE:
  • 3 cloves Garlic, Minced
  • 3 Tablespoons Olive Oil
  • ½ cups Tomato Juice
  • ½ cups Lime Juice, Plus Lime Wedges For Serving
  • ½ cups Soy Sauce
  • ½ cups Brown Sugar
  • 1 teaspoon Pepper
  • FOR ASSEMBLING THE TACOS:
  • 1 whole Onion, Sliced
  • 1 whole Red Pepper, Sliced
  • 1 Tablespoon Olive Oil
  • 8 whole Corn Or Flour Tortillas
  • 3 whole Jalapeños, Sliced
  • Fresh Chopped Cilantro, For Topping

Preparation

Mix all the marinade ingredients together in a large bowl or large resealable bag. Add chicken pieces and mix into the marinade. Place in dish and marinate 8 hours or overnight, turning once or twice.

Place chicken and marinade into a large skillet on medium heat until cooked through, about 5–8 minutes.

In a separate pan, sauté onion and red pepper in a little olive oil until heated through.

Char tortillas on an open gas flame, about 30 seconds per side, moving the tortillas around with tongs until blackened on edges.

Assemble and top with jalapeños, cilantro and serve with lime wedges.

Note: These can be made burrito-style. Steam some rice and roll them up!
