Description
This is one of those simple dishes that just tastes so good and it’s perfect as a starter or as a light lunch. As with most of my recipes, you can customise this to your own taste by adding different vegetables and herbs.
Ingredients
- 450 grams Potatoes, Peeled And Cubed
- 1 whole Onion, Finely Diced
- 1 whole Pepper, Finely Diced
- 2 teaspoons Coriander Leaf
- 1 teaspoon Garlic Paste
- ½ teaspoons Ground Cumin
- Salt And Pepper, to taste
- 1 Tablespoon Grated Dairy Free Cheese
- 3 Tablespoons Gluten Free Plain Flour
- Oil, As Needed To Cook Patties
Preparation
Place cubed potatoes in a large pan of salted water. Bring to the boil and then simmer for 15 minutes or until tender. Drain potatoes then return to the pan. Cook over low heat for 1 minute. This dries out the potatoes.
Mash potatoes. Stir in remaining ingredients. Form into small patties, using about 1 tablespoon of mixture. Chill in the fridge for 30 minutes.
Add a drizzle of olive oil in a shallow pan over a medium heat. Cook patties for 2 minutes on each side or until golden and crisp.
Serve immediately with a crisp salad.
