Description
A traditional Cambodian dish that is pure comfort. Root vegetables, green beans, coconut milk, curry and chicken, or a substitution of beef or pork.
Ingredients
- 1 liter Coconut Milk, Divided
- 1 Tablespoon Curry Powder
- 100 grams Shallots, Chopped
- 500 grams Chicken
- 200 grams Carrots, Sliced
- 400 grams Potatoes, Chopped
- 100 grams Green Beans
- 200 grams Onions, Chopped
- ¾ teaspoons Salt, Or To Taste
- Brown Rice, To Serve
Preparation
Pour about 1 cup of the coconut milk, curry and shallots in a large saucepan over medium high heat and heat 10 minutes. Add meat and cook until sauce has thickened slightly. Add carrots and potatoes and cook another 5 minutes. Add the remaining coconut milk and cook until boiling.
Add green beans and onions and simmer 20 minutes. Add salt to taste. Serve over brown rice.
