Vegetable Bolognese & Linguine

Description

Delicious weeknight supper fare for two!

Ingredients

  • 8 ounces, weight Linguine Pasta Noodles (Or Your Favorite)
  • 4 ounces, weight Ground Beef Or Ground Turkey
  • 1 whole Yellow Onion, Diced
  • 1 whole Carrot, Peeled, Diced
  • 1 stalk Celery Heart, Diced
  • ½ teaspoons Black Pepper
  • 1 teaspoon Italian Seasoning Mix
  • 12 ounces, fluid Diced Tomatoes
  • ½ cups Frozen Mixed Vegetables (Corn, Green Beans, Peas)
  • ¼ cups Grated Parmesan Cheese (optional)

Preparation

In a large skillet over medium heat, add ground beef or ground turkey meat, diced onions, diced carrot, diced celery, and cook for several minutes, until meat is no longer pink. Drain and return to skillet. Add black pepper and Italian seasoning and stir well. Add diced tomatoes and stir to combine. Add frozen veggies, educe heat to low, cover with a lid and simmer 15 minutes, stirring occasionally.

In a pot of boiling water, add linguine (or your favorite pasta) and cook according to package instructions. Drain and set aside.

To serve, add cooked pasta to plates. Ladle bolognese on top, and garnish with grated cheese if desired.

We love this with toasted crusty bread. Enjoy!
