Description
Crispy sweet potato pancakes topped with a tangy yogurt chive sauce.
Ingredients
- FOR THE SWEET POTATO PANCAKES:
- 3 whole Sweet Potatoes
- 3 whole Eggs
- ½ cups Diced Shallot
- ¼ cups Chopped Chives
- 3 cloves Minced Garlic
- 4 Tablespoons Whole Wheat Flour
- 1 teaspoon Salt
- ½ teaspoons Freshly Cracked Black Pepper
- 3 Tablespoons Canola Oil, Or Other High-heat Cooking Oil
- FOR THE CHIVE YOGURT SAUCE:
- ½ cups Freshly Squeezed Lemon Juice
- ½ cups Greek Yogurt
- 4 Tablespoons Chopped Chives
Preparation
1. Shred sweet potatoes with a box grater or in the food processor.
2. Mix shredded sweet potatoes with eggs, shallot, chives, garlic, flour, salt and pepper.
3. Form 2-inch round patties of the mixture.
4. Sauté in high-heat cooking oil over medium/high heat for 4-5 minutes each side.
5. Combine yogurt, lemon juice and chives for the chive yogurt sauce. Serve alongside potato pancakes.
