Fantastic dinner option for a small family!
Ingredients
- 8 whole Chicken Thighs
- Salt And Black Pepper To Taste
- 4 whole Sun-Dried Tomatoes, Chopped
- 1 whole Bell Pepper, Chopped
- 1 whole Yellow Onion, Chopped
- 2 Tablespoons Capers
- ¼ cups Sliced Black Olives
- 1 Tablespoon Italian Seasoning Mix
- 1-¼ cup Low Sodium Chicken Stock
- 2 cups Grated Pecorino Cheese
Preparation
Preheat oven to 400ºF.
In a 10-inch skillet (I use cast iron), add all ingredients, sprinkling the grated cheese on top of everything. Cover with foil and place in the oven on the middle rack. Bake for 40 minutes, then remove foil and bake another 5 minutes to crisp up the cheese.
Serve over pasta or rice.
