Cinnamon Apple Overnight Oatmeal (Crockpot)

Description

All you have to do is add a few things into a crockpot before going off to bed and you will wake up to a hot, rich bowl of oatmeal that will keep you going through the day.

Ingredients

  • 2 whole Apples, Cored & Chopped Into 1/2 ” Chunks
  • 1-½ cup Milk (I Used Soy Milk)
  • 1-½ cup Water
  • 1 cup Steel Cut Oats
  • ¼ cups Brown Sugar
  • 1 pinch Salt
  • 2 Tablespoons Butter
  • ½ teaspoons Cinnamon
  • 1 teaspoon Vanilla Extract
  • 3 Tablespoons Raisins, Optional (I Used Golden Raisins)
  • FOR THE ADD-INS (optional):
  • 1-½ Tablespoon Nuts, Chopped, For Each Serving
  • 2 Tablespoons Milk, For Topping Each Serving
  • ½ teaspoons Brown Sugar, To Sprinkle On Each Serving

Preparation

Spray a 3 1/2 quart (or larger) crockpot with nonstick cooking spray.

Add all of the ingredients to the crock pot. Stir, cover and cook on low for 7 hours. Serve and top with any of the add-ins, if desired. (I topped off our bowls with about 2 tablespoons soy milk and added some more brown sugar.)

The additions are completely up to the preferences of who is eating the oatmeal. You can add chopped nuts, raisins, maple syrup, more sugar, or more milk to your bowl of oatmeal to get the flavor and consistency you prefer.

To reheat single servings: Add 1 cup of oatmeal into a microwave-safe bowl and add a few tablespoons of milk, until you get the desired thickness. Microwave on 1 minute on high, stir, and microwave some more until hot.
