Ingredients
- FOR THE KEBABS:
- ⅔ pounds Ground Beef Or Lamb
- 1 Tablespoon Grated Onion
- 2 cloves Finely Grated Garlic
- ½ teaspoons Crushed Red Pepper Flakes
- ¼ teaspoons Cinnamon
- ¼ teaspoons Allspice
- ¼ teaspoons Ginger
- ½ teaspoons Cumin
- ½ teaspoons Salt (plus More For Sprinkling)
- 2 Tablespoons Bread Crumbs
- 2 Tablespoons Olive Oil
- FOR SERVING (optional):
- Greek Or Other Thick Yogurt, For Dipping
- Fresh Cucumber And Tomatoes
- Pita Bread
- Fresh Herbs For Sprinkling
- Couscous Or Rice
- Roasted Veggies
Preparation
Preheat oven to 425ºF. Prepare a pan for roasting with parchment paper or cooking spray.
In a bowl, combine beef, onion, garlic, crushed red pepper, cinnamon, allspice, ginger, salt, cumin, and bread crumbs until just combined. Combine meat mixture into small mini-loaves.
Place on prepared pan. Drizzle with olive oil and sprinkle tops with a tiny bit more salt. Roast kebabs at 425ºF for 15–20 minutes until browned on top and just cooked through. Don’t overcook! Choose any accompaniments you’d like and serve!
Note: Grate onion and garlic directly over meat before mixing to catch all the juices. If you don’t have a microplane or other small grater, just mince them finely.
