Get Your Veggies at Breakfast Oat Bran

Description

I am not a veggie fan, so if I can knock out a vegetable serving before 10 am, woo! This might look weird, but it’s very yummy! My friend Heather gave me this idea, so really she is the weird one. Try it!

Ingredients

  • ½ cups Oat Bran
  • 1 cup Water
  • 1  Handful Fresh, Baby Spinach
  • 1 dash Sea Salt
  • Banana Slices, To Serve

Preparation

Cook oatbran and water in a pot, until just bubbly and thick. Remove from heat and add spinach and salt. Using an immersion blender, puree till creamy and smooth. Top with banana slices.

Note: For some crazy reason, bananas and spinach go well together! Almond butter also works great.
