Sorrullitos (Fried Corn Fritters) with Mayo-Ketchup Dipping Sauce

Description

Sorrullitos are fried corn fritters from Puerto Rico. They are very similar to hush puppies. They are sweet and tender on the inside, golden and crunchy on the outside. They are very easy to make and are delicious for parties or for a snack. One batch makes about 20.

Ingredients

  • 2 cups Water
  • 3 Tablespoons Sugar
  • ½ teaspoons Salt
  • 1 Tablespoon Butter
  • 1-½ cup Corn Meal
  • 1 cup Shredded Cheddar Cheese (optional)
  • Oil, For Frying
  • ¼ cups Ketchup
  • ¼ cups Mayonnaise
  • 1 dash Hot Sauce, Optional

Preparation

Boil water in a small saucepan on high. Add sugar, salt and butter. Change temperature to low. Add cornmeal and stir until a dough forms.

Take saucepan off heat. Let the mixture cool for a few minutes.

Prepare logs by taking about 2 tablespoons of dough and rolling it into the shape of a log. If adding cheese, form dough into disk, add cheese in the middle and roll the dough around the cheese.

Heat enough oil in a heavy pot so that the oil is deep enough to cover the logs. Put a few logs into the hot oil. Fry logs until golden on all sides. Remove them from the oil using a slotted spoon and set them on a paper towel lined plate. Repeat frying the rest.

In a small bowl combine mayonnaise, ketchup and hot sauce for dipping sauce.

Variation:
For a sweeter treat, omit cheese, and sprinkle the fried logs with some powdered sugar mixed with cinnamon after frying.
