Description
This breakfast does take a little love and time to prepare, which may not always be on your wish list on a weekend morning. But if you’re willing to roll out of bed and into your kitchen, l really can’t think of a better way to start the day!
Ingredients
- ½ whole Small White Onion, Chopped
- 2 cloves Garlic, Chopped
- 2 whole Jalapenos, Chopped
- 1 Tablespoon Olive Oil, Or As Needed
- 7 ounces, weight Diced Tomatoes With Juice
- ½ cups Vegetable Broth
- 1 teaspoon Salt
- 1 sprig Oregano
- ½ teaspoons Cumin
- ¼ teaspoons Cayenne Pepper
- ½ whole Lime, Juiced
- 4 whole Eggs, Over Easy
- ¼ cups Feta Cheese
- 7 ounces, weight Can Black Beans, Rinsed
- 4 whole Corn Tortillas
- 2 whole Green Onions, Chopped
Preparation
In a small frying pan, saute onions, garlic, and jalapenos in olive oil until onions are translucent.
Add tomatoes with their juice and vegetable broth, and let reduce for 3-4 minutes.
Season with salt, oregano, cumin, cayenne pepper, and lime juice.
In a separate pan, cook eggs over easy. Sprinkle with feta cheese when cooked.
Heat black beans and tortillas (I like to char my tortillas on the stove).
Assemble huevos rancheros by placing 1/4 of the beans on 1 tortilla, top with 1 egg, and 1/4 of the tomato sauce.
Finally, add a few green onions, and repeat.
