Hummus-Crusted Chicken and Summer Veggies

A delicious, one-dish meal, a perfect weeknight meal the whole family will love!

Ingredients

  • 1  Zucchini, Chopped
  • 1  Yellow Squash, Chopped
  • 1  Onion, Chopped
  • 1 clove Garlic, Minced
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Dry White Wine
  • Salt And Pepper
  • 4  Boneless, Skinless Chicken Breasts
  • 1 cup Hummus Of Your Choice
  • 1 teaspoon Paprika

Preparation

Preheat oven to 450ºF. Grease a large baking dish with cooking spray.

In a large bowl, toss zucchini, squash, onion, garlic, olive oil, and white wine together until everything is coated in the oil-wine mixture. Season with salt and pepper.

Place all of the vegetables on the bottom of the baking dish in an even layer. Lay chicken breasts over vegetables. Spread hummus evenly on top of chicken. Sprinkle with paprika.

Bake for 25–30 minutes, until chicken is fully cooked and the vegetables are tender.
