Breakfast, Lunch, Supper and Snack Waffles

Description

My son woke up and wanted waffles. Then he liked them so much he had them for every meal today. I modified my old recipe and, judging by his love of them, I think I perfected the recipe.

Ingredients

  • 3 whole Eggs
  • 1-½ cup Buttermilk
  • 1-¾ cup Flour
  • ½ cups Vegetable Oil
  • 2 Tablespoons Baking Powder
  • 1 teaspoon Baking Soda
  • ½ cups Sugar

Preparation

Whisk eggs until frothy. Add buttermilk and mix. Stir in remaining ingredients and whisk really well until there are no lumps. This batter will fluff up because of the reaction with the buttermilk and soda. Cook in your favorite waffle iron; no greasing necessary.

Note: You may wonder why I add that last comment about the greasing but I have my grandmother’s old waffle iron and seem to have difficulty finding a recipe that doesn’t stick to her old plates. This recipe though doesn’t stick and that is a bonus for me. I get to keep grandma’s waffle iron!
