Italian Egg Cups

Description

This is a creative way to use leftover pasta and sauce in a delicious way.

Ingredients

  • 1 Tablespoon Butter To Grease Pan
  • 1 cup Cooked Pasta, Preferably Spaghetti
  • 6  Eggs
  • 6 Tablespoons Spaghetti Sauce Or Sauce Of Choice
  • 1 cup Cheese Of Choice
  • ¼ cups Fresh Chopped Parsley Or Cilantro For Garnish

Preparation

Lightly grease a muffin pan with butter. Put a layer of cooked noodles on the bottom of each cup. Crack an egg and place 1 in each cup. The egg will set the pasta into a crust.

Place a generous amount of the sauce on top. Add cheese and bake 20 minutes or until the eggs are cooked through. Top with fresh chopped herbs and serve with a fresh brewed cup of coffee. And a fork.
