My family really enjoyed the combination of sweet and savory flavors as well as the varied textures.
Ingredients
- 3 slices Bacon
- ¼ pounds Hot Breakfast Sausage (I Used Jimmy Dean Hot)
- 1 Sweet Potato, Peeled And Diced
- ¼ Onion, grated
- Salt And Pepper, to taste
- 1 teaspoon Rosemary
- 2 Tablespoons Butter
- 1 Fuji Apple Cored And Diced
- 1 Granny Smith Apple Cored And Diced
- 1 teaspoon Cinnamon
- 1 pinch Nutmeg
- 4 ounces, weight Dried Bing Cherries, Chopped
- 6 Large Eggs
- 2 ounces, weight Cranberry Cinnamon Goat Cheese
Preparation
Dice bacon and fry it in a skillet over medium heat. Remove bacon from skillet and add sausage into the skillet. Brown sausage and then remove it from the pan.
Keep enough fat in the pan to cook the sweet potato. Add the diced sweet potato, grated onion, salt, pepper and rosemary. Cook until potato is tender.
In another skillet melt the butter. Add the diced apples, cinnamon and nutmeg. Cook over medium heat until apples soften and start to caramelize. Add cherries and cook for a couple of minutes.
Add the bacon and sausage back into the pan with the sweet potatoes and mix together. Then add the apple mixture into the skillet with the sweet potato. Mix together.
Whisk eggs in a bowl and add them to the skillet. Cook and stir the mixture until eggs are cooked. Add goat cheese, stir until cheese is melted and evenly distributed (about 1 minute).
Plate, serve and enjoy.
