Flipped Pannukakku (Finnish Pancake)

Description

A rich and custardy Finnish Pancake with a twist.

Ingredients

  • 2 Tablespoons Unsalted Butter
  • 6  Eggs
  • ¾ cups Milk
  • ¼ cups Flour
  • 1 Tablespoon Stevia (Or 1/3 Cup Sugar)
  • ¼ teaspoons Salt
  • 1 teaspoon Vanilla Extract
  • 1 cup Berries (Fresh Or Frozen), For Garnish

Preparation

1. Preheat oven to 375ºF. Put all of the butter in the bottom of a cast iron skillet and place it in the oven until completely melted.

2. In a bowl, add together eggs and beat with a hand-mixer until fluffy.

3. Add in milk, flour, stevia, salt, and vanilla and mix until the mixture resembles thick cream.

4. Take skillet with melted butter out of the oven and pour in egg mixture.

5. Bake for 20-25 minutes or until a toothpick comes out clean. It should be light brown and a bit crispy around the edges when done. It will rise above the edges of the skillet and look like it is inflated.

6. It will fall once removed from the oven. Take skillet out and flip onto a plate.

7. Slice and serve immediately and warm with powdered sugar, berries or other delicious toppings!
