Puttanesca Pizza

Description

A standard pizza dough topped with a classic puttanesca sauce. This pizza is loaded with garlic, spice, anchovies and a great briny flavor.

Ingredients

  • ¼ cups Olive Oil
  • 4 cloves Garlic, Thinly Sliced
  • 1 teaspoon Dried Red Chili Flakes
  • 4 whole Fillets Of Anchovy, Chopped
  • ¼ cups Kalamata Olives, Pitted
  • 1 pinch Salt To Taste
  • 1 teaspoon Cracked Black Pepper
  • 1 cup Tomato Sauce
  • 1 Tablespoon Capers
  • 1 pound Your Favorite Pizza Dough
  • 1 Tablespoon Italian Seasoning
  • 2 cups Shredded Mozzarella Cheese

Preparation

Heat your oven to the highest temperature, with a pizza stone inside. In my case, I use the Kettle Pizza maker. I think I have mastered pizzas now. Again get it up to the highest temperature. I find that around 620 F or in that area is a great temperature to get a pizza cooked in a matter of minutes.

Start by making the sauce. Remember, it’s all about the sauce. Into a skillet, on medium heat, add the oil and let that come to temperature.

Add the garlic, chili flakes, anchovies, Kalamata olives, and salt and pepper. Give it a good stir.

Once the garlic begins to turn color, add in the tomato sauce, and give it another good stir. Then add in the capers, and let the sauce cook on low heat for about 10 minutes.

Next, roll out or stretch your pizza dough to fit a medium to large size pizza pan. Place it on your pizza peel (if using a pizza stone) or pizza pan. Sprinkle the dough with the Italian seasoning. Ladle the puttanesca sauce on top of the dough, then top with the mozzarella cheese.

Place into the very hot oven on the preheated pizza stone (or use your grill and Kettle Pizza if you have one), and cook until the dough is nice and crisp and the cheese is nice and melted. This should take around 15 minutes but will vary based on the oven temp.

The end result is awesome! The sauce, if you have never had it, is packed full of flavor. It’s spicy, briney, garlicky, and just down right delicious. When put on a pizza, well heck, it just gets even better. Hope you enjoy!
