Description
Quick and easy egg bake that you can switch up easily with different add-ins. Perfect for New Year’s Day brunch!
Ingredients
- ½ pounds Bacon
- ½ whole Onion, Chopped
- ½ whole Green Pepper, Chopped
- 7 whole Eggs
- 1 dash Milk Or Cream
- ½ cups Shredded Cheese, Plus Additional For Topping
Preparation
In a large frying pan, fry the bacon. After a few minutes, add the onion and pepper. Sauté until tender.
Whip up the eggs with a splash of milk. Add the meat, veggies and 1/2 cup cheese. Pour into a baking dish that has been sprayed with cooking spray and top with additional cheese.
Bake at 350ºF for about 30 minutes. When a toothpick inserted in the middle comes out clean, it is done.
Top with salsa if you wish.

Note: This recipe can be changed easily by switching ham or sausage for the bacon. You can also change the veggies and add mushrooms, broccoli, tomatoes—the possibilities are endless!
