15-Minute Pasta Primavera

Description

Pasta Primavera that can be made in less than 15 minutes. This quick recipe is packed full of veggies and yummy bacon!

Ingredients

  • ½ pounds Penne Pasta
  • 3 slices Bacon, Chopped
  • 1 whole Onion, Diced
  • 2 cloves Garlic, Minced
  • ½ pounds Frozen Mixed Vegetables
  • 1 Tablespoon Flour
  • ¼ cups White Wine
  • ½ cups Milk
  • 2 Tablespoons Butter
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • 2 Tablespoons Parsley

Preparation

Prepare pasta by bringing a large pot filled with water to a boil. Add a big pinch and toss in pasta. Cook until noodles are al dente (consult directions on the box). Drain pasta, reserving about ½ cup pasta water.

Meanwhile, in a large skillet, cook bacon over medium-high heat until crisp, about 3 minutes. Remove from pan with a slotted spoon (reserving bacon grease) and set bacon aside.

Using same pan with bacon grease, add onion and sauté until tender, about 3 minutes. Add garlic and frozen vegetables and sauté until everything is tender and warmed though, about 5 minutes.

Sprinkle flour over vegetables and stir around until it dissolves. Stir in wine, milk, and butter and bring to a simmer. Season with salt and pepper to taste.

Add pasta to sauce, sprinkle in parsley and bacon, and toss everything together. If too dry, add in some reserved pasta water. Garnish with extra bacon, parsley, and freshly ground black pepper.
