Spicy Grilled Chicken & Veggie Bowls

This will become your new favorite weeknight meal!

Ingredients

  • 2 whole Boneless, Skinless Chicken Breasts
  • ½ teaspoons Seasoning Salt (I Used Lawry’s)
  • ¼ teaspoons Paprika
  • ¼ teaspoons Cayenne Pepper
  • 1 pinch Black Pepper To Taste
  • 1 bag (12 Oz. Size) Assorted Frozen Vegetables

Preparation

In a plastic bag, combined all ingredients except vegetables. Mush it all around to evenly coat chicken breasts in marinade. Transfer to fridge for at least 30 minutes.

Heat grill to medium-high, and generously spritz with cooking spray. Grill each piece of chicken for 4–5 minutes on each side, or until grill marks appear and meat is no longer pink in the center.

While chicken is grilling, prepare vegetables. If you’re using a frozen pack, just follow instructions on the back of the package. This typically requires 4–6 minutes in the microwave. If you’re using fresh veggies, this may require more time, so be sure to account for that in your cooking time.

Divide cooked vegetables among bowls. When chicken is nice and grilled, transfer each to its own serving bowl filled with veggies.
