Description
Vegan deviled eggs using red potatoes and a mashed potato and vegan mayo mixture for the filling.
Ingredients
- 12 whole Red Potatoes
- 1 Tablespoon Olive Oil
- ¾ cups Vegan Mayonaise
- 2 teaspoons Mustard
- ½ teaspoons Salt
- ¼ teaspoons Ground Black Pepper
- ¼ teaspoons Chili Powder
Preparation
Preheat oven to 400ºF. Cut potatoes in half, and rub each with olive oil. Place on a baking sheet. Bake for 40–45 minutes. Let cool. Scoop out the middles of potatoes and place into a large bowl.
Mash potatoes with vegan mayo, mustard, salt, pepper, and chili powder. Spoon filling back into potato skins.
