Description
Hot and Sour Chicken Sauté is a quick weeknight meal that tastes like take-out, but is easy and just as delicious!
Ingredients
- 2 Tablespoons Brown Sugar
- 1 Tablespoon Cornstarch
- 1 cup Vegetable Broth
- 2 Tablespoons Rice Wine Vinegar
- 2 Tablespoons Soy Sauce
- 1 Tablespoon Canola Oil
- ¾ pounds Boneless And Skinless Chicken Breast, Cubed
- 1 Tablespoon Fresh Ginger, Minced
- 3 cloves Garlic, Minced
- ½ teaspoons Crushed Red Pepper
- 4 ounces, weight Crimini Mushrooms, Sliced
- 1 Red Bell Pepper, Sliced Thin
- Cooked White Or Brown Rice, To Serve
- 2 Tablespoons Sliced Green Onions, For Garnish
Preparation
In a small bowl, stir together brown sugar, cornstarch, vegetable broth, rice wine vinegar and soy sauce until smooth. Set aside.
In a large sauté, heat oil over medium-high heat. Add chicken, ginger, garlic and crushed red pepper. Cook for 1 minute. Add mushrooms and bell pepper and cook for an additional 3 minutes. Stir in sauce, cover and cook for 5–6 more minutes, or until chicken is fully-cooked. Remove from heat.
Serve chicken on top of a bed of a rice and sprinkle with green onions. Enjoy!
