Description

It’s football season, and every Saturday morning my boys watch their beloved LSU Tigers play ball. This is the breakfast of champions! GEAUX TIGERS!

Ingredients

  • 1 can (8 Oz. Size) Flaky Biscuits
  • 4  Eggs
  • Salt To Taste
  • Grape Jelly, To Taste

Preparation

Bake the biscuits according to the instructions on the can.

In a greased frying pan, drop two eggs over low heat and cover. Salt to taste. Cook them ‘Sunny Side Up’ – cooking until all the white is cooked but the yolk is still very runny. (I add a drop of water to speed up the cooking process by steaming them and this also helps to assure the yolks don’t over cook).

Put your cooked eggs into a bowl and smash the whole egg (whites included) with a fork. Set aside.

Remove the bottom layer of each cooked biscuit, and turn it upside down onto a plate. Spread on a desired amount of grape jelly and top with some of the smashed egg on each biscuit. Serve immediately.

NOTE: 1 serving = 3 biscuits + grape jelly + 2 smashed eggs divided
