Description
This galette is the perfect dish to serve up at brunch! Takes 20 minutes or less and is oh so tasty!
Ingredients
- 3 teaspoons Chili Powder
- 1 teaspoon Paprika
- 1 teaspoon Coriander
- 1 teaspoon Cumin
- 1 teaspoon Garlic Powder
- Salt And Pepper, to taste
- 2 cups Couscous, Cooked
- 3 whole Eggs
- 1 cup Mozzarella, Shredded
- 1 cup Cheddar Cheese, Shredded
- 1 Tablespoon Unsalted Butter
- Queso Fresco (garnish)
- Cilantro, Garnish
Preparation
In a large bowl, combine chili powder, paprika, coriander, cumin, garlic powder, salt, pepper, cooked couscous, eggs, mozzarella, and cheddar. Preheat a large nonstick skillet to medium-high heat. Melt butter and add couscous mixture to skillet, spreading into an even layer. Cook until golden brown on bottom, about 5 minutes. Remove from heat and place skillet under a broiler for about 5 minutes or until golden brown.
Remove skillet from oven and invert a plate over skillet, flip and serve. Garnish with queso fresco and cilantro.
