Healthy and delicious dip!

Ingredients

  • 1  Large Purple Beet
  • 2 cloves Garlic, Peeled
  • 1 can (15 Oz. Size) Garbanzo Beans, Rinsed And Drained
  • 2 Tablespoons Fresh Lemon Juice
  • ¼ cups Olive Oil
  • Kosher Salt To Taste

Preparation

1. Bring a small pot of water to boil. When it’s boiling add the beet. Boil the beet until tender, 10-15 minutes. Remove the beet from the water and then peel it, rinse and let it cool.
2. Once cooled, cut the beet into bite-sized pieces.
3. In the bowl of a food processor, combine the beets, garlic cloves, garbanzo beans, lemon juice and olive oil.
4. Pulse until the hummus is well combined and thick.
5. Sprinkle with kosher salt to taste.

Recipe yields 2 cups.
