Peaches and Banana Pancakes

Description

A overripe banana in your fridge? Make these delicious pancakes!

Ingredients

  • 1 cup Plus 2 Tablespoons Flour
  • 2 teaspoons Baking Powder
  • ¼ cups Sugar
  • ½ cups Plus 2 Tablespoons Milk
  • 1 whole Egg
  • 1 whole Banana, Thinly Sliced
  • 1 Tablespoon Butter
  • 2 whole Peaches, Thinly Sliced
  • Powdered Sugar

Preparation

Mix together flour, baking powder and sugar. Add milk and the beaten egg and mix. Add banana and mix gently.

Preheat a pan over medium heat. Melt butter. Put two peach slices cheek-by-jowl on the pan, and cover with a tablespoon of pancake mixture. Cook about 3-4 minutes on each side or until goden brown. Make about 12 pancakes like this.

Serve hot or warm, sprinkle with powdered sugar.
