Description
Hummus Veggie Pizza is a delicious, healthy pizza for spring and summer. Hummus, ricotta cheese, and a variety of fresh veggies create a pizza that’s packed with flavor and good for you!
Ingredients
- 1 cup Hummus
- 1 cup Ricotta Cheese, Divided
- Your Favorite Pizza Dough (homemade Or Store-bought)
- 1 cup Broccoli Florets
- ½ cups Yellow Corn
- ½ cups Zucchini, Diced
- ½ Medium Red Onion, Thinly Sliced
- Salt And Pepper, to taste
Preparation
Preheat oven to 425ºF.
In a medium bowl, mix together hummus and 1/2 cup ricotta cheese until well combined. Spread evenly over pizza dough and add broccoli florets, corn, zucchini, and red onion. Give it a few grinds of salt and pepper. Drop remaining ricotta cheese over pizza.
Transfer pizza to oven (I baked mine on a pizza stone) and bake for about 20 minutes, or until pizza appears done. Let cool a bit and slice and eat.
