How To Juice Cranberries

Description

My family is a supplier for Ocean Spray, and this is direct from Grandpa’s bog. Don’t be spooked by the amount of sugar—you may indeed want that much. In fact, you may find it’s less sweet than some brands on the supermarket shelf. Plus, it uses cane sugar instead of corn syrup.

And no, it doesn’t involve a tiny juicer.

Ingredients

  • 4 cups Whole Cranberries
  • 4 cups Water
  • ⅓ cups Sugar

Preparation

Pick over cranberries first to remove any soft or rotted berries. Combine cranberries and water in a stainless steel saucepan, and bring to a boil.

When you hear the skins on the berries start popping, start the timer for ten minutes and let the berries boil. Remove from heat.

Strain the berries and water mixture through a colander lined with cheesecloth, reserving the liquid. Discard the pulp.

Dump the water and juice back into the saucepan and bring back to a boil. When it’s at a good rolling boil, add the sugar, and let boil for another two minutes.

Let cool. This makes about a quart.
