Description

This slow cooker navy bean soup with ham is like a cozy sweater on a cold day. It’s full of hearty veggies, creamy beans, fresh herbs, and salty ham.

Ingredients

  • 1 pound Dried Navy Beans
  • 6 cups Chicken Stock
  • 1-¼ pound Ham, Cut Into Bite-sized Chunks
  • 1 can (14 1/2 Oz. Size) Petite Diced Tomatoes
  • 6  Medium Carrots, Sliced
  • 3 stalks Celery, Chopped
  • 1  Large Onion, Chopped
  • 3 cloves Garlic, Minced
  • 2 teaspoons Fresh Chopped Thyme
  • 2 teaspoons Fresh Chopped Rosemary
  • Salt And Pepper, to taste

Preparation

Add navy beans to a large bowl. Cover with water and allow to soak overnight.

Drain the beans and add to bowl of slow cooker. Add remaining ingredients to slow cooker with beans. Stir to combine.

Cook on low for 10 hours. Season with salt and pepper to taste. Serve with crusty bread.
