Carrot, Almond and Raisin Energy Bites

Description

Shredded carrot, raw almond and sweet raisin studded energy bites.

Ingredients

  • 1 cup Rolled Oats
  • ¼ cups Raw Almonds, Halved
  • ¼ cups Carrot, Shredded
  • ¼ cups Raisins
  • ¼ cups Ground Flaxseed
  • ½ cups Peanut Butter
  • ⅓ cups Honey

Preparation

Combine oats, almonds, shredded carrots (I use a potato peeler to shred them), raisins and flaxseed in a medium-sized mixing bowl. Add peanut butter and honey and stir to coat evenly. Refrigerate for 1 hour.

Shape into 1-inch balls. (This yielded me about 20.) Store in the refrigerator.
