Description
There is nothing better than guacamole … except when it turns brown after .2 seconds! And avocados can be expensive. You can use edamame as an alternative! They are just as healthy, green, fresh tasting, you can always find them, and they don’t turn brown. My husband didn’t even notice the difference!
Ingredients
- 1 cup Edamame, Shelled
- 1 cup Avocado, diced
- 1 Lime, Juiced
- 1 cup Tomatoes, Finely Diced
- 1 cup Red Onion, Finely Diced
- 1 whole Jalapeno, Finely Diced
- 1 Huge Handful Of Cilantro, Roughly Chopped
- Salt And Pepper, to taste
Preparation
Cook the edamame according to package directions.
Add the avocado, edamame, lime juice, and a pinch of salt and pepper to a small food processor. Pulse until combined and a desirable consistency.
Scoop mixture into a container. Add the tomato, onions, jalapeno, and cilantro to the container. Stir to combine the rest of the ingredients. Taste and season if needed.
Keep refrigerated, unless you are eating the dip!
