Grits a Yankee Would Eat!

Description

I never liked grits until I tried this recipe made by a friend of mine.

Ingredients

  • 1 whole Medium Onion, Diced
  • 3 Tablespoons Butter, Unsalted
  • 4 cups Water
  • 1 teaspoon Salt
  • 1 cup Stone Ground Grits (not Quick Cooking)
  • 1 can (10.75 Oz. Size) Cream Of Chicken Soup
  • 1 Tablespoon Black Pepper

Preparation

Saute the onion in the butter over low heat until translucent. While this is happening, boil the water with the salt. Add the grits, whisking as you mix them into the boiling water. Reduce the heat to medium low, cover, and let cook for 30-40 minutes, stirring occasionally. When the grits have absorbed most of the water and have become creamy in texture, add the soup and onions, stirring to combine. Season with pepper.

I like to serve mine with sour cream and cheddar cheese!
