Apple-Pecan Baked Oatmeal

Ingredients

  • 5 whole Granny Smith Apples, Peeled, Cored And Coarsely Chopped
  • ½ cups Chopped Pecans, Toasted
  • 18 ounces, weight Old-fashioned Oats (about 5 1/4 Cups)
  • 3 whole Large Eggs, Beaten
  • 1 cup Firmly Packed Light Brown Sugar
  • 1 cup Unsweetened Applesauce
  • 1 Tablespoon Ground Cinnamon
  • 4 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1 teaspoon Pure Vanilla Extract
  • 1-¼ cup Water
  • 1 cup Milk
  • ¼ cups Butter, Melted

Preparation

Preheat oven to 350ºF.

Spread chopped apples on bottom of a lightly greased 13×9-inch glass baking dish. Sprinkle toasted pecans over apples.

Combine oats, eggs, brown sugar, applesauce, cinnamon, baking powder, salt, vanilla, water, milk and butter, stirring until well blended. Pour oat mixture evenly over apples and pecans.

Bake, covered, at 350ºF for 30 minutes; uncover and bake 20 more minutes or until golden brown and set.

Cut into squares; serve warm with milk or cream. Makes 12 servings.
