Description
Use up leftover pulled pork or other meat with this delicious and easy recipe for nachos baked in a skillet.
Ingredients
- 1 Tablespoon Oil
- 1 whole Small Onion, Chopped
- 1 whole Red Pepper, Chopped
- 2 cups Pulled Pork Or Other Pre-cooked Meat
- 1 Tablespoon Taco Seasoning
- 2 cups Tortilla Chips
- 1 cup Shredded Cheddar Cheese
- ½ whole Lime, Juiced
- 1 Tablespoon Cilantro, Choped
- 1 cup Shredded Lettuce
- 1 whole Small Tomato, Diced
- 2 Tablespoons Sour Cream
Preparation
1. Preheat oven to 350ºF.
2. In a skillet, heat oil over medium-high heat and cook onion and pepper until tender. Add pork and seasoning and stir until combined and coated. Remove everything from skillet.
3. Line skillet with chips. Top with meat and vegetable mix. Spread cheese over top. Bake 10–15 minutes, or until cheese is melted.
4. Sprinkle nachos with lime juice and top with cilantro, lettuce, tomatoes, and sour cream. Serve immediately.
