Description

A nice refreshing, but sweet, summer cocktail. These can be made with other juices, too….watermelon, strawberry, guava, lemon or lime all work well. Adjust the sugar, juice and liquor types and amounts as desired to suit your tastes, also, very easily made “virgin” by leaving out the kick, so kids can enjoy one with you! :)

Ingredients

  • 1 Cup Fresh Mint Leaves
  • 1T Brown Or Raw Sugar
  • 2-3 Cups Peach Juice(can Use Fresh, Bottled, Or “nectar” Often Sold In Mexican Sections Of Some Groceries, But It Needs To Be 100% Juice)
  • 12-16 Oz Club Soda Or Seltzer
  • 1/2-1 Shot Bourbon, Whiskey Or Rum, Each Serving, As Desired(optional)
  • Crushed Ice

Preparation

Place mint leaves and sugar in small glass or pottery bowl and crush leaves well with wooden or plastic spoon or use a mortar and pestle to break them up and create a grainy “paste” type mixture.

Add about 2t of mixture to bottom of serving glass.

Fill glass about 1/2 full with crushed ice.

Top with 1/4-1/2 cup peach juice, rum, then fill with club soda.

Garnish with mint, if desired.
