Description

Bite-sized Buffalo chicken appetizers!

Ingredients

  • 2 whole Boneless, Skinless Chicken Breasts
  • ½ cups Buffalo Sauce, Depending On Desired Spice Level
  • 12 whole Wonton Wrappers
  • 1 cup Shredded Cheddar Cheese
  • 1 cup Bleu Cheese
  • 1 cup Scallions, Chopped

Preparation

1. Cook chicken according to your preferred method (on the stovetop over medium heat for 5 minutes per side; or another method). When done, remove chicken from the pan and shred it. Put it into a bowl and toss with Buffalo sauce. Use enough sauce to achieve your desired heat level.
2. Preheat oven to 375 F. Spray a 12-count muffin tin with non-stick spray and put a wonton into each well, forming “cups.” Cook in the oven just for a few minutes, until just lightly browned. Remove pan from oven and allow cups to cool.
4. Once cooled, fill cups with shredded chicken and cheddar cheese. Return to oven for only a few minutes, until cheese melts.
5. Sprinkle with bleu cheese and scallions.
