Description

These polenta crackers are nothing like what you would find in a store. The have a great texture.

Ingredients

  • ½ cups All-purpose Flour
  • ¼ cups Corn Flour (cornmeal Or Masa)
  • ½ cups Instant Polenta Meal
  • ½ teaspoons Salt
  • 2 Tablespoons Extra Virgin Olive Oil
  • ¼ cups Water, Plus 1 Tablespoon

Preparation

Preheat the oven to 350 F.

Combine all of the ingredients in a medium bowl. Place the dough on a work surface and roll it out until it’s about half of a centimeter thick. Then cut it into small circles. I like to use the cap of the olive oil bottle, but a round cookie cutter about an inch or an inch and half in diameter will be fine too. Just keep reworking the scraps of dough until you have used as much as you can and cut out as many crackers as you can.

Bake on a greased cookie sheet for 5 minutes. Then turn off the oven and let the crackers sit inside just for a few minutes to get them crisp. Transfer the crackers to a cooling rack to cool them completely. Enjoy!
