Description
Bright, flavorful and healthy mini pita pizzas topped with hummus and the most delicious Greek salad!
Ingredients
- ½ cups English Cucumber, Diced
- ½ cups Yellow Bell Pepper, Diced
- ½ cups Cherry Tomatoes, Quartered
- ¼ cups Red Onion, Diced
- ¼ cups Kalamata Olives, Diced
- ½ teaspoons Extra Virgin Olive Oil
- 1-½ teaspoon Red Wine Vinegar
- ¼ teaspoons Kosher Salt
- ¼ teaspoons Dried Oregano
- 4 whole Mini Pitas
- ¼ cups Hummus, I Used Traditional Flavor
- ¼ cups Feta Cheese Crumbles
Preparation
In a medium sized bowl combine the cucumber, yellow bell pepper, tomatoes, onion, olives, olive oil, vinegar, salt and oregano.
Spread a tablespoon of hummus on top of each mini pita. Divide the Greek salad mixture evenly on top of each pita. Top each pita with a tablespoon of feta cheese. Serve immediately.
