Description
Great homemade blini which take 5 minutes to whip up. Serve with smoked salmon and sour cream!
Ingredients
- 3 whole Eggs
- ¾ cups Buttermilk
- 1 cup Milk
- 1-¾ cup Flour
- ⅓ teaspoons Salt
- ½ Tablespoons Butter, Or More As Needed
Preparation
1. Whisk together the eggs, buttermilk and milk for 3-4 minutes. Whisk in flour and salt.
2. Heat a non-stick skillet over medium heat. Coat the bottom of the skillet with the butter.
3. Using 1 tablespoon of batter per blini, drop as many as can fit in your skillet without them touching. Cook each blini for about 2 minutes on one side, then 30 seconds to 1 minute on the other side. You do not need to butter the skillet again for each new batch. If you see the last batch is a bit too browned, add a bit of butter to the skillet. Serve warm or reheat in a preheated oven for 5 minutes before serving.
