Like pumpkin bread with chocolate chips, just in bar format!
Ingredients
- 1-½ cup Flour
- ½ teaspoons Salt
- 1 teaspoon Baking Powder
- ½ teaspoons Ground Cinnamon
- ¼ teaspoons Ground Nutmeg
- ¼ cups Oats
- ½ cups Brown Sugar
- 1 cup Chocolate Chips
- ½ cups Vegetable Oil
- ½ cups Canned Pumpkin
- 2 teaspoons Vanilla Extract
- 1 Tablespoon Sugar
- 3 Tablespoons Honey
Preparation
Preheat oven to 325ºF. Grease an 8-inch square pan. Set aside.
In a large bowl, stir together flour, salt, baking powder, cinnamon, nutmeg, oats, brown sugar and chocolate chips. Set aside.
In a small bowl, whisk together the oil, pumpkin, vanilla, sugar and honey. Add the pumpkin mixture to the flour mixture. Stir until batter is just mixed.
Spoon batter into the prepared pan and use a spatula or your fingers to spread the batter evenly in the pan.
Bake for 25 minutes. Let cool in the pan on a wire rack for at least 20 minutes before cutting.
