Description
Chunks of white meat chicken cook to perfection alongside veggies and pineapple as they come together to make the delicious sauce.
Ingredients
- 3 Boneless, Skinless Chicken Breasts
- 2 Tablespoons Magic Dust Or Cajun Seasoning
- 2 Medium Bell Peppers, Seeded And Chopped Into 1 Inch Pieces
- 1 Medium Onion, Chopped Into 1 Inch Pieces
- 1-½ cup Fresh Pineapple Cubes (fresh Is Best But I Have Used Canned As Well)
- ½ cups Your Favorite Honey Bbq Sauce (I Always Use Sweet Baby Rays)
- Hot Cooked Rice, For Serving
Preparation
If freezing:
Place all of the ingredients except the rice in a freezer-safe zip-lock bag. Seal the bag and shake to coat. Freeze until ready to use.
Pour the frozen ingredients into a greased 13×9 baking dish. Preheat your oven to 350 F. Put dish into the heated oven and bake for about 45 minutes to an hour.
If making fresh:
Preheat your oven to 350 F. Spray a 13×9 inch baking dish with cooking spray.
In a large bowl add the chicken and sprinkle with the magic dust. Toss to coat. Place chicken and all the remaining ingredients (except rice and BBQ sauce) in the prepared 13×9 inch baking dish. Drizzle with the BBQ sauce and bake for 30 minutes stirring about halfway through.
Serve over hot cooked rice.
